Mouth : round with hints of roasting (coffee, cocoa), persistent. Tannins are present but fused.
Alcohol level : 14.5%
Winemaking : Stripping, then traditional fermentation. Aging for 12 months in new small barrels of American oak, followed by 12 months in bottle
Food pairing : Cold meats, full-flavoured meats, cheeses, paella, tapas, game, poultry (pigeons, quail and duck)
Aging potential : 6 to 9 Years
