The average age of the vines is 35 years. The grape is lightly withered on the plants and hand picked in little crates at the end of September.

Color : intense ruby red.
Nose : powerful with perfumes of black fruit, prunes, black cherries, compote, balsamic hints, accompanied with hints of spices and cocoa.
Mouth : well rounded with a retro olfaction of very ripe black fruit. Nice density and very long lingering flavour.
Alcohol level : 16%
Winemaking : Fermentation et maceration at a controlled temperature for about 20 days. Filtering in small French oak barrels for around 12 months.
Food pairing : Scaloppine of veal with balsamic, grilled red meat, game, venison, guineau fowl with balsamic, Chinese food (sweet sour), full bodied and powerful cheeses.
