Ancien et rare cépage local qui donne des vins d’une grande complexité, bien structurés et développant des arômes de fruits mûrs, très productif les premiers 10 ans, d’où le nom Susumaniello (chargé comme un âne). Après 10 ans de vie, la productivité du cep descend sensiblement et les raisins qui murissent à la mi-septembre sont très riches en sucre, avec une belle teneur en acidité totale.

Nose : Rich and intense, with blackberry and cherry aromas and soft toasty notes.
Mouth : Full-bodied and supple, with good structure and persistent flavour.

Winemaking : In stainless steel vats for 4 months, followed by 6 months in barrel and 3 months in bottle.
Food pairing : Ideal with leg of lamb, red meats, game birds, full-bodied cheeses, especially hard cheeses.
