En 2005, le premier Amarone « Ca'Coato » est élaboré avec les raisins de leur parcelle située à San Vito près de Negrar.

Il est produit à partir des raisins Corvina, Corvinone et Rondinella.Chaque grappe est sélectionnée et cueillie à la main dans le vignoble «Ca' Coato» situé dans la zone Classique de la ville de Negrar. Le terroir est de type calcaire. Chaque année, 5'000 à 6'000 bouteilles sont produites.

L'Amarone «Ca' Coato» présente un nez intense et complexe typique de l'Amarone avec des parfums de mûres, myrtilles, cerises, cannelle, réglisse, café, chocolat, tabac, pruneaux secs, et tant d'autres. En bouche, il est chaleureux, velouté, souple, avec des tannins fins et agréables et une persistance gustative interminable. Ce vin profond, plus complexe et intense que son petit frère « Moropio » aura besoin de temps pour s'exprimer pleinement.

Color : Intense ruby red with garnet reflections.


Nose : Intense and complex typical of Amarone. Scents of blackberries, blue berries, cherries, cinnamon, liquorice, coffee, chocolate, tobacco, dried prunes amongst others.


Mouth : We find the same sensations on the palate, warm, velvety, supple, with fine and pleasant tannins and an unending lasting flavour.


Alcohol level : 16%


Winemaking : The ageing lasts 2 years in barrels and casks of oak, cherry wood and chestnut, followed by 12 months in bottle.


Food pairing : Roast venison with wild mushrooms, game, red meat, duck breast with prunes, quail stuffed with foie gras, cheeses with truffle, oriental dishes, full bodied and lightly spicy cheeses. Meditation wine.
