Moros comes from old vines (40/45 years) on chalky clay soil in the district of Guagnano, in the heart of the Salice Salentino denomination.
Claudio Quarta, owner of Tenute di Emera and Cantina San Paolo, took over this vineyard some years ago. The concept is simple: a one-hectare plot, one cellar and one wine. With a production of only 6,600 bottles, this wine is undoubtedly one of the jewels of Apulia.
The harvest, done entirely manually, takes place the last Saturday of the month of September. The yield is about 700gr per square metre.

Color : Intense ruby red with purple hues.
Nose : Full and very intense, notes of vanilla and cherry jam.
Mouth : Aromas of small red fruits, balsamic, soft tannins, fine and elegant, very long lasting flavour.
Alcohol level : 14.5%
Winemaking : The aging lasts 12 months in oak barrels and 6 months in bottle
Food pairing : Roast lamb, red meat, roasts, game, full bodied cheese.
Aging potential : 10 years
