For several years, René Barbier (son) tasted all kinds of rosé wines, looking for one or more to inspire him.
Dido Rosa is produced from Grenache, white Grenache, grey Grenache, Macabeo, Syrah and Carignan which gives it exceptional complexity. This wine departs from the rosés that we are used to during summer seasons. The white grapes are mixed with red grapes and the long aging gives this wine a fascinating and surprising length for a rosé.

Color : Salmon pink.
Nose : Fresh, mineral and white fruit.
Mouth : Full, with a complexity of flavors and a beautiful length.
Alcohol level : 13%
Winemaking : Fermentation with indigenous yeasts lasts at least 6 months. The aging is done for about 14 months in old oak barrels.
Food pairing : Fish in a sauce, paella, grilled white meat.
Aging potential : 4 to 5 Years
