The Selvarossa obtained for the last five vintages the highest grade awarded by the Gambero Rosso (3 bichieri). The wine is complex and very pleasant. Definitely a bargain!
Maceration takes place in tanks of 500 hl rotating horizontally for 14 days. During this period, the wine completes the fermentation at a temperature not exceeding 27 ° C. Next, the wine is transferred to barrels (Allier & Troncais), where malolactic fermentation takes place. Aging lasts about 6 months in small oak barrels and 4 months in bottle.
