Winemaking : controlled fermentation in tanks of 50 hl. Very long maceration with frequent punching down and pumping the juice to obtain optimum extraction. Aging: 12 months in French oak barrels of 500 litres.
Food pairing : filet mignon of pork with mushrooms, stuffed chicken, quail stuffed with foie gras, rabbit stew.
