This wine has been produced for centuries throughout Tuscany and is obtained by drying the grapes on racks before vinification. It is commonly known as a straw wine. Its name comes from a banquet given in 1439 where a church official exclaimed "it looks like a Xantos wine", making it seem like a Greek wine. The participants thought that this priest was talking about the great virtues of this wine and gave it the name Vin Santo.
