CORASH, CANNONAU RISERVA
Corash is the name given by the Cantina Sociale della Vernaccia Oristano, in Sardinia, to Cannonau Riserva, in memory of a small Roman village which has now disappeared. The Cannonau is the best known and most widespread grape on the island, making up almost 30% of the Sardinian wine production. In fact, it is a variety of Grenache that was imported in the 14th century, at the beginning of the Spanish colonization of Sardinia. Today, Cannonau is an appellation of origin (DOC) and the "Corash" is considered one of the most popular of Sardinian Cannonaus. Maceration of the wine occurs with the skins still on, at a temperature of 24° for a period ranging from 12 to 18 days. After vinification, the wine is aged in small oak casks for 12 months.
The "Corash" has a garnet red colour with purple highlights, all with a remarkable intensity. The nose reveals aromas of red and black berries with a lightly toasted finish. On the palate, it is full bodied with an elegant structure and a lingering finish. This is a wine that will be appreciated, of course, with all Italian dishes (for example pasta and pizza) but also, particularly, with osso bucco or beef or lamb dishes, game, not to mention hard cheeses such as Sardinian Pecorino or Parmesan. Serve at a temperature of 16 °.
