On a volcanic soil, the vineyard is situated 350 metres above sea level, facing south, south / west. The manual harvest takes place between October 20th and November 10th.
After a rigorous selection of grapes, the fermentation takes place at a controlled temperature of 24°C. The maceration lasts about 14-20 days. Aging lasts about 12 months in new French oak barrels. The wine is then matured of a few years in tanks and bottle.

Nose : Rich, complex bouquet, scents of cherries, violets.
Mouth : Great structure, balanced, dominance of small red fruits, spices, tobacco and chocolate. The tannins are supple and elegant, Long lasting flavour.
Alcohol level : 14.5%
Winemaking : Aging lasts about 12 months in new French oak barrels. Maturing 12 to 24 months in bottle.
Food pairing : Venison, wild boar, red meat, roast baby lamb, spicy dishes, hard cheeses.
